There should be no problem with connecting flights. The airlines will allow enough time for plane changes and the first airline will check your bags all the way through. This happens every day.
No, the unrelated airline has NO RESPONSIBILITY to get you there ontime to reach your international flight. They could potentially give you the courtesy, but will end up costing more.
If you want to take advantage of the low cost from Edinburgh to Manchester, then make sure you take an earlier flight to minimize the risk.
