You have to go to the southern hemisphere, really.
South Africa, perhaps?
most of africa — it’s summer anywhere south of the equator.
It is winter in the northern hemisphere in December. Europe is not going to be sunny. Even Spain will only be getting 6 hours of daylight, and it gets very cold inland even there.
Africa is a better better bet.
Tunisia is usually warm around christmas!
The Canary Islands are quite sunny and warm in December. But if it was me, I’d be off to somewhere like Barbados…. usually about 28-30 degrees at that time of year.
Morocco, Egypt not too bad.
Dubai hotter.
Mombasa lovely.
Anywhere in the Middle East or Africa is wonderful at this time of the year. Egypt, and Luxor in particular is wonderful – the Sonesta St George is a fabulous 5* hotel in the heart of Luxor within easy reach of everything in that part of the world. Good luck.

Go to the Greece or Spain(Canary island). Also you can go to the Turkey
Good places for winter su holidays are the Canary Islands, Morocco, Tunisia, Egypt, Cyprus, Turkey, Madeira.
Long haul destinations would be Florida, Australia, South Africa.
It’s very sunny in the Algarve, Portugal in December throughout Winter. Maximum temperatures at Praia da Rocha and Faro are around 17-18C in the next 9-10 days. At night it does get chilly.
New Years day was a glorious sunny day (19C) with people in bikini sunbathing at Praia da Rocha and others actually swimming and I would expect the same at the end of this year!
